Roasted Red Peppers and Cashews

I made some amazing pasta tonight!! Matt said it was probably the best he's ever had! I had 6 leftover red peppers that I needed to do something with, so I roasted all of them on my gas stovetop (I LOVE fresh roasted red peppers). Second, I've really been wanting to try using cashew milk instead of cream in a recipe. Sounds like the perfect combo to me!

Here's what I did:

*Place 6 red peppers atop gas stove (or you can broil them in the oven), turning after skin is totally black. It usually takes about 20 mins or so. Once the pepper is completely black, wrap each pepper in foil and let sit for 20-30 minutes to steam itself and cool a little.
*cut one onion into small pieces and sauté until soft and translucent. Add some garlic and sauté another minute or so. Add about 1/2 cup white wine or chicken broth and cook down a little.
*add 1-2 cups of raw cashews to a food processor and add about 1 cup of water. Mine ended up kinda chunky and thick but I liked it that way. The way I saw it made before was more the consistency of cream, so just add more water to your liking. Set aside.
*go back to the peppers and use the foil to push the black off of the peppers. It slides off really easily if blackened. Then take the seeds and stem off. This gets very messy, but is well worth the effort.
*add the peppers and onion/garlic mix to the food processor and blend until smooth.
*to the sauté pan, add the blended mix and the cashew milk to the pan and heat on low
*I added homemade garlic salt (YUM! I'll add the recipe soon) and pepper and some fresh chopped basil. I also added one packet of Splenda for a little sweetness, some turmeric because its really good for you, and also cayenne for a little kick.


This was DELICIOUS!! Please try it! I served it with some Giada DeLaurentis Pasta I found at Target, al dente of course! The pasta isn't anything healthy at all, I just loved the shape of it though!!

Menu Tuesday

I thought I should join Nicole this week for posting my menu for the week. Although, like Danica  things change throughout the week and I really can't plan ahead as much as I would like.

I am starting from this past Sunday, because we're still eating the leftovers for lunches  :)

Sunday
    White Bean Turkey Chili in the crockpot
         chicken broth
         leftover turkey meat
         several cans of different beans-great northern, pinquitos, etc, drained
         can of corn, drained
         can of diced tomatoes
         flour or cornstarch for thickening
         cumin , coriander, tiny bit of salt, pepper, cayenne
         whatever else floats your boat!

Monday
      leftover Chili

Tuesday
      Crockpot lasagna
           ground turkey
           ground sausage
           mushrooms
           spinach
           cottage cheese
           parm
           mozzarella
           Italian seasoning, or just oregano, thyme
           2 eggs
           lasagna noodles, dry
           spaghetti sauce
           onions and garlic

      cook up the sausage, turkey, onions and garlic. In another bowl, mix together cottage cheese, parm, italian seasonings, and eggs. Put some of the meat mixture on the bottom of the crockpot. Cover with a layer of sauce, then spinach and mushrooms, then mozz., then cottage mixture. Sometimes I add cream cheese to this mixture...just because. Then a layer of noodles. I broke mine in order for it to fit better in the round crockpot. Then layer again until all ingredients are gone. Today is my first time doing this in a crockpot, so I'm sure I will have to check on it periodically to see if it needs some broth or something for moisture.

              fresh ginger (I keep mine in the freezer and grate it directly from there into the dish. This way, my ginger stays fresh and it's so easy to store and use!)

expanding our horizons

Matt and I have been trying to eat a bit healthier lately. We recently saw an article about the 10 healthiest foods, and some of the items on it were watercress, dandelion greens, spinach, kale, and beans. I feel like we eat a lot of vegetables as is, but I figured I could add a few of these in here and there.

I made split pea soup yesterday and added some kale and leeks-delicious! It's too bad Matt thinks he has developed an allergy to split peas. Seriously. His throat got all itchy and mouth got numb after one bite. He took some benadryl and did a test later on in the day. He ate some kale alone-nothing. Had no leeks anymore, so no test there. And ate two more bites of the soup, bam! Same thing. Lame. Now I will be eating split pea soup for awhile, and that is with freezing half!

I was perousing the web today and came across this recipe on the front page! http://thepioneerwoman.com/tasty-kitchen/recipes/salads/sesame-kale-salad/  It was delicious! I didn't have any roasted red pepper, but I did add turkey, watercress, and some goat cheese. The kale was very filling, and the sesame seeds added great flavor.
1 pound Kale Leaves, Once Tough Stems And Ribs Have Been Removed

2 whole Large Roasted Piquillo Or Red Pepper, Cut Into Thin Bite-size Strips
3 Tablespoons Toasted Sesame Seeds
¼ cups Rice Wine Vinegar
2 Tablespoons Soy Sauce
2 Tablespoons Toasted Sesame Oil
MIX it all up and enjoy!


On a side note, I do most of my grocery shopping at Fred Meyer. Lately they have had these turkey tenderloins on sale. There are two of them per package, and marinated in different flavors, on sale 2/$10. Matt and I share one tenderloin for dinner, and save the other for the next day. They are extremely easy to make and are SO moist every time! It makes life easy for us when Matt makes dinner.

I was on standby today for work, and did not get called in!! Woot woot! It was sooo nice out today so I enjoyed every second of my freedom. Although, I got a ton of stuff done: two loads of laundry, swept and mopped the kitchen and pantry floor, washed my sheets, vacuumed, went for a run/walk, chatted with the neighbors, and washed my car!

QUINOA

"It is called quinoa (pronounced keen-wa), and is a grain that comes from the Andes Mountains of South America. Quinoa's origins are truly ancient. It was one of the three staple foods, along with corn and potatoes, of the Inca civilization. Quinoa was known then, and still is known, with respect, as the mother grain. We call it the "Supergrain of the Future."


Quinoa contains more protein than any other grain; an average of 16.2 percent, compared with 7.5 percent for rice, 9.9 percent for millet, and 14 percent for wheat. Some varieties of quinoa are more than 20 percent protein.

Quinoa's protein is of an unusually high quality. It is a complete protein, with an essential amino acid balance close to the ideal ... similar to milk!

Quinoa's protein is high in lysine, methionine and cystine. This makes it an excellent food to combine with, and boost the protein value of, other grains (which are low in lysine), or soy (which is low in methionine and cystine)."      info courtesy of:        http://www.quinoa.net/


I made this recipe the other night and both Matt and I loved it! We are definitely looking forward to eating more quinoa in our diet. I intend on making the last recipe next since I LOVE black beans!
QUINOA WITH PEAS AND PARMESAN
Ingredients


1 (15 ounce) can diced tomatoes, drained 2 tablespoons white wine 2 tablespoons coconut oil 4 cloves garlic, minced 1 small onion, chopped 1 small stalk celery, finely chopped 3 1/2 cups vegetable broth 2 cups rinsed quinoa 2/3 cup grated Parmesan cheese 1/2 cup evaporated milk 1 cup frozen peas, thawed salt to taste 1/2 teaspoon ground white pepper

Directions

Preheat oven to 400 degrees F (200 degrees C). Adjust oven rack to its topmost position. Lightly oil a baking sheet.

Toss the diced tomatoes with the wine, and spread out on baking sheet. Roast in preheated oven until the tomatoes have dried a bit, but have not begun to burn, about 15 minutes. When the tomatoes are just starting to turn brown at the edges, remove, and allow to rest at room temperature.

Meanwhile, melt the coconut oil in a large saucepan over medium-high heat. Stir in the garlic, onion, and celery. Cook and stir until the onion has softened and turned translucent, 5 to 7 minutes. Pour in vegetable broth and quinoa, and bring to a boil over high heat. I used EVOO and chicken broth.

Reduce heat to medium-low, cover, and simmer until the quinoa is tender and the liquid has been absorbed, 15 to 20 minutes. Stir in the Parmesan cheese, evaporated milk, peas, and tomatoes. Season with salt and white pepper.

SOUTHWESTERN QUINOA
Ingredients


1 teaspoon vegetable oil 1 onion, chopped 3 cloves garlic, peeled and chopped 3/4 cup uncooked quinoa 1 1/2 cups vegetable broth 1 teaspoon ground cumin 1/4 teaspoon cayenne pepper salt and pepper to taste 1 cup frozen corn kernels 2 (15 ounce) cans black beans, rinsed and drained 1/2 cup chopped fresh cilantro

Directions

Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and saute until lightly browned.

Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer 20 minutes,

Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans and cilantro

Soup for dinner

Soup! This is pretty much the same as my previous soup I made last year. It has homemade turkey meatballs, and acini de pepe noodles. I added poblano and jalapeno peppers, bok choy, spinach, oregano, pepper, cumin, and smoked paprika. I will garnish with a ton of fresh cilantro!

Banana Deliciousness

I had some over ripe bananas that I needed to use up (we never seem to finish them all), and I wasn't in the mood for banana bread. So, I searched the internet for some deliciousness and boy, did I find it! I found this blog with the following recipe for Banana Bars. I guess the original recipe is from My Kitchen Cafe at Allrecipes.com. GO MAKE THESE. NOW.


Bars -
Ingredients:
½ cup butter, softened
1 ½ cups white sugar
2 eggs
1 cup sour cream   [I used cream cheese instead because that's what I had]
1 tsp vanilla
2 cups all-purpose flour
1 tsp baking soda
¼ tsp salt
three ripe bananas (about 1 cup)

Directions:
Preheat the oven to 350. Grease a 10 x 15 inch jellyroll pan or one 9X13 pan and an additional 8X8 pan. [I used two 8x8 pans instead]  In a large bowl, cream together the butter and sugar until smooth. Beat in the eggs, one at a time, then stir in the sour cream and vanilla. Combine the flour, baking soda and salt in a medium bowl; stir into the batter. Finally, mix in the mashed banana. Spread evenly into the prepared pan(s). Bake for 20 to 25 minutes, until a toothpick inserted into the center comes out clean. Allow bars to cool completely before frosting.

Whipped Cream Cheese Frosting  [I didn't use frosting...but it sounds amazing!!!]
Ingredients:
1 (8 oz) package cream cheese, softened to room temperature
1 cup white sugar (you can use either granulated sugar or confectioners’ sugar – the confectioners’ sugar tends to dissolve better and not be as grainy but either one works fine) (I used confectioners)
1/8 tsp salt
1 tsp vanilla
1 ½ cups heavy whipping cream

Directions:
In a large bowl combine cream cheese, sugar, salt and vanilla. Beat until light and fluffy. Set aside. In another medium bowl, beat whipped cream until stiff peaks form (it helps to use a chilled bowl and chilled beaters). Fold whipped cream into cream cheese mixture.

I ended up calling this Banana Cake because of its soft, moist consistency. It had the perfect amount of banana flavor and well, was simply perfect all around. Bryan and Amanda came over and devoured it for a snack! You know it's good when I use the word devour.
